  • 1 piece seabass or pearl grouper
  • 1 piece lime small
  • 1 stalk coriander
  • 1 clove garlic
  • 10 grams young ginger
  • 1 teaspoon sugar
  • 15 ml soya sauce superior grade
  • 40 ml water
  • Coarse salt

garnish

  1. Fry 1 clove sliced garlic with 1 teaspn sesame oil: 20 seconds
  2. Chopped 1 stalk coriandor; Dont Bruise them

special sauce

Mix 15ml soya sauce;1 teaspn sugar; 40ml Water; 1 teaspn sesame oil; pinch of pepper powder. Heat them on hotpan for 15 seconds

  1. Remove all the blood from the fish
  2. Remove Slime with lime and salt. Wash and Wipe Dry
  3. Rub salt and Sesame oil on Fish thinly
  4. Slit 3 slashes on each side of fish. Stuff Slice ginger into gap and cavity
  5. Pre-boil Steamer. Steam fish. 500g=8mins 800g=10mins
  6. 1kg=12mins
  7. Pour Fried garlic on fish
  8. Pour special sauce on fish
